My new design for LunchBox Lab gets unveiled tonight at a private party for the benefit of HopeLink. The location is Redmond Town Center, in a space once occupied by Ruby Tuesdays. The old restaurant was totally gutted, the space pared down in size by 50%, and was essentially starting from a bare shell.

I’ve been guiding the LunchBox Laboratory brand since Neighborhood Grills joined forces with the originator/chef, Scott Simpson, some 3 years ago or so. But this is revised in at least 3 ways from past efforts: concept, (moving to fast casual), name (shortening to the much preferable ‘Lab’), and starting to gel some of the graphic elements, colors, and finishes that populate the place.

Working with Sue Genty, (SGID), I got to finally do one of these things with a proper budget and some tech touches. Like many of these first time things, there are a few straggler elements that have yet to be installed but most people won’t notice what’s not there, we hope!

I’ll have some more photos of store details, inside and out, as the I get them. For the moment, you can compare the snapshot from this morning, (above) with this hand drawn rendering from early this spring (below).
